Pillar Brief · AEO
Answer Engine Optimization for Restaurants
AEO is the discipline of making your restaurant legible to systems that answer questions directly instead of returning a list of links. For restaurants, the answer engines that matter are ChatGPT, Perplexity, Google AI Overviews, and the conversational layer inside delivery apps.

What AEO actually is
Answer Engine Optimization is the practice of structuring your public signals so an AI system can confidently answer "where should I eat?" with your restaurant in the answer. It is not keyword SEO with a new name. SEO competes for a rank position. AEO competes for inclusion in a generated answer, which is a binary: you are named, or you are not.
Why restaurants are different
Restaurant queries are almost never generic. Guests ask by occasion ("anniversary"), party type ("dinner with my in-laws"), dietary need ("celiac-safe pasta"), or vibe ("not too loud, good for conversation"). Answer engines map those constraints against every public signal you emit. Restaurants that read as specific get named. Restaurants that read as generic get filtered.
The four signal surfaces AEO cares about
- Your website copy. Especially the About, menu, and reservation pages. This is the primary ground truth.
- Your menu language. Dish names, descriptions, and section headers carry more interpretive weight than operators realize.
- Review sentiment. Not the star count. The phrases guests use to describe the experience.
- Your Google Business Profile and structured data. Hours, cuisine tags, attributes (good-for-groups, reservations, etc.).
How to do AEO without guessing
AEO without a baseline reading is wishful thinking. You need to know what answer engines currently say about you before you change a single word. The gap between your intended positioning and AI's current interpretation is the actual work to do.
